Homemade Ricotta
RECIPE:
Makes 2 cups ricotta
4 cups Whole Milk
2 cups Heavy Cream
1-1.5 tsp Salt
4Tbs White Wine Vinegar
Combine milk, cream and 1 teaspoon salt in a sauce pan and bring to a boil. Once boiling shut off heat and add vinegar. Wait 3minutes and strain in a chees cloth for 10-20minutes. Taste and add more salt if necessary.
