    Chicken Caesar Wrap

     

     

    I love a good salad, the crunch from the lettuce, the tang from the dressing, and the hidden surprises of things like chewy cranberries and juicy oranges.

     

     

     

     

    The only real problem that I have with salads is that they don't contain carbs.

     

     

     

     

    I know, you're asking yourself why that is so important... Well, guys...

     

    I'm a carboholic...

     

     

     

     

    I love carbs, they are what I crave all day long and without them a meal just doesn't feel like a meal, it's simply incomplete.

    A dinner without bread, pasta or rice feels like a book with no end, a joke without the punch line, it's just...not right.

     

    And sure, you can add some croutons to your salad, or throw a side of bread next to it, but come on! We can do better than that!!

     

     

     

     

    What about taking that delicious salad and wrapping it in a tortilla, giving it transportability, a fun factor and most importantly making it a real meal.

     

    I'm a genius!! (Yes, I understand I'm not the first one to think of this concept, just let me have my moment!)

     


     

     

     

     

    RECIPE:

     

    Dressing:

    4 Garlic Cloves

    2 tsp Anchovy Paste

    ¾ cup cubed Parmesan

    2 Egg Yolks

    2-3 Lemons, juice

    ½ tsp Salt

    ¼ tsp Pepper

    2Tbs Mayo

    ¼ cup Olive Oil

     

    Put all ingredients in a food processor except olive oil. Once everything is semi-pureed stream in olive oil.


     
     

    Wrap:

    4-5 cups Romaine Lettuce, chopped into 1inch pieces

    3/4 cup Jicama, chopped into ½ inch pieces

    2 small/medium grilled chicken breasts, chopped into ½-1inch pieces

    3/4 cup dressing

    10 shaves of Parmesan

    3/4 cup croutons, chopped into ½ inch pieces

    6 large tortillas

     

    Combine all ingredients except tortillas in a large bowl. Toss until everything is well distributed and the dressing covers everything evenly. Take about 1.5cups of mixture and place in the center of a tortilla. Roll up like a burrito and serve!


     
     

    Notes:

     

    • The Jicama adds a nice crunch, you could skip it or add thinly sliced radishes or apples instead
    • Chop everything SMALL, the smaller the better so that it all stays in the wrap and you get a little bit of everything with each bite!
    • Warm tortillas slightly by covering with a damp paper towel and microwaving for 15-30 seconds. The warmer they are the more pliable they will be.
