    Apple Pies in Apples

     

     

     

    Today we are going to talk about cute things. Silly cute things. And no, I'm not referring to another YouTube video of a wet cat or a laughing baby...

     

     

     

     

     

    And no, it's not a picture of two animals that don’t belong together and yet are best friends.

     

    Oh! Like the one where the baby monkey is sleeping with the doggy and he's got his arm around him and you just know they will be BFF's till the end of time!

     

    No!!

     

     

     

     

    I’m talking about something cute…silly cute…that you can eat!

     

    Something that says “hey, look at me” and when you do you think, “well hello, aren’t you beautiful, and precious, and...and...I MUST EAT YOU!!”

     

     

     

     

    I'm talking about the crazy delicious idea of making an apple pie...

     

    wait for it...

     

    keep waiting...

     

    IN AN APPLE!

     

     

     

     

    Crazy talk I know, but this craziness is reality.

     

    See, I love apple pies, it's the kind of dessert that speaks to my sugar- loving side. And since it has apples I'm pretty sure I'm allowed to call it nutritious, too. Hey, there’s fruit in there right?!

     

     

     

     

    Now don't get me wrong, to create this ultimate cuteness requires a little work.

     

    But the result is...you guessed it...is darn cute!!

     

     

     

     

     

     

    RECIPE:


     

    2 Macintosh Apples, peeled and chopped small

    6 Granny Smith Apples

    1-2 Lemons, juice only

    1/4cup Dark Brown Sugar

    3/4cup White Sugar

    2tsp Cinnamon

    Pinch of Nutmeg

    Pinch of Salt

    Pie Dough – See Recipe

     

     

    Chop the Macintosh apples and cover in lemon juice and set aside.  Cut off the top off each Granny Smith Apple and cut an “X” in the top of the apple, then cut a circle around the “X”. Scoop out the insides of the apple with a spoon or melon baller. Save what you can and add those apple insides to the MacIntosh Apple chunks. Squeeze lemon juice to the insides of the hollowed out apples and set aside.  Combine the remaining ingredients in a bowl and mix them with the apple pieces. Stuff the apple and sugar mixture into each apple. Roll out pie dough to 1/2inch and cut out 4-5inch circles. Place each circle on top of the apple. Add extra cut outs of dough if desired and place on top. Brush dough with an egg wash (1egg beaten with 1Tbs water). Bake at 375 for 30-35minutes until apples are tender and crust is brown and crisp.

    Awesome! This is just what I need! I have such a bad sweet tooth, but I'm trying to lose weight for my upcoming wedding. I need more of these healthy desserts! :)
